Taco Bowls

If you love taco night but don’t always love how you feel after, this one’s for you. These gut-friendly taco bowls are one of my go-to weeknight meals when I need something quick, nourishing, and easy on digestion.


They come together in about 20 minutes, are completely customizable, and use simple, whole-food ingredients that support your gut. Think balanced protein, fiber-rich carbs, and healthy fats—all layered into one satisfying bowl.


Whether you’re dealing with bloating, working on healing your gut, or just want a healthier take on a classic, this is a recipe you’ll find yourself making on repeat.


Oh and they are kid and husband approved!



Ingredients:

  • White rice - cook according to package

  • Grass-fed ground beef (I like the brand Force of Nature)

  • Tomatoes

  • Avocado

  • Arugula

  • Cilantro

  • Lime Juice

  • Goat cheese

  • Chipotle Ranch sauce (I like this one)

  • Taco seasoning

    • 2 tsp garlic powder

    • 2 tsp chili powder

    • 2 tsp paprika

    • 2 tsp pepper

    • 1 tsp sea salt


Directions:

  1. Cook rice according to package

  2. Cook ground beef on skillet with avocado oil or olive oil until fully brown then sprinkle on taco seasoning and cook for another 2 minutes on medium/low heat

  3. Chop tomatoes, avocado, and cilantro

  4. Once rice and beef are done cooking assemble bowls:

    1. rice

    2. beef

    3. tomatoes

    4. avocado

    5. cilantro

    6. arugula

    7. goat cheese

    8. lime juice

    9. chipotle ranch sauce
