Taco Bowls

If you love taco night but don’t always love how you feel after, this one’s for you. These gut-friendly taco bowls are one of my go-to weeknight meals when I need something quick, nourishing, and easy on digestion.
They come together in about 20 minutes, are completely customizable, and use simple, whole-food ingredients that support your gut. Think balanced protein, fiber-rich carbs, and healthy fats—all layered into one satisfying bowl.

Oh and they are kid and husband approved!

Ingredients:
White rice - cook according to package
Grass-fed ground beef (I like the brand Force of Nature)
Tomatoes
Avocado
Arugula
Cilantro
Lime Juice
Goat cheese
Chipotle Ranch sauce (I like this one)
Taco seasoning
2 tsp garlic powder
2 tsp chili powder
2 tsp paprika
2 tsp pepper
1 tsp sea salt
Directions:
Cook rice according to package
Cook ground beef on skillet with avocado oil or olive oil until fully brown then sprinkle on taco seasoning and cook for another 2 minutes on medium/low heat
Chop tomatoes, avocado, and cilantro
Once rice and beef are done cooking assemble bowls:

arugula
goat cheese
lime juice
chipotle ranch sauce
