One of my favorite go to dinners! So simple yet so delicious and the perfect Scrounge to use whatever you have at home.

If you don't have these exact ingredients, Scrounge with the things you have at home and you may end up creating something even better!
If you don’t have quinoa, use brown rice pasta or zucchini noodles
If you don’t have olive oil, use avocado oil or water
If you don’t have pasta sauce, use salsa
If you don’t have avocado, do without
I n g r e d i e n t s
*serves 2-4 people
1 cup quinoa
2-4 cup veggies of your choice (i.e. carrots, bell peppers, broccoli, zucchini, tomatoes, spinach, sweet potatoes, etc.)
1-2 tbsp olive
Sea salt and pepper to taste 1 24oz jar of red pasta sauce
1 avocado (optional)

Cook quinoa, pasta or zucchini noodles according to package.
While quinoa cooks, chop all veggies.
Add oil or water to a large skillet and let heat for about 1 min.
Add all veggies to skillet (excluding spinach if you are using spinach).
Cook veggies until soft/tender, about 10 mins.
Once veggies are about done, add the spinach and red sauce to the skillet (do not add salsa yet if using) and cook for another minute. Once heat is turned off add your salsa if using.
To serve: add 1-2 scoops of quinoa/pasta to a bowl, top with veggie and sauce mixture and add avocado on top if desired.
