Poke Bowl

My husband and I love poke bowls, but never thought to make them ourself. They are the perfect Scrounge, so easy and versatile! I did my best below to approximate the measurements but measurements really aren't needed for this dish just make it to your liking. This has become a new staple in our home and we can't wait to make it again soon. Let me know if you Scrounge up a poke bowl, I'd love to see it! Happy Scrounging!

T h e S c r o u n g e

If you don't have these exact ingredients, Scrounge with the things you have at home and you may end up creating something even better!

  • If you don’t have maple brown rice, use quinoa or lentils

  • If you don’t have tuna or salmon or are vegetarian, use watermelon, falafels, tofu or roasted sweet potatoes (can marinade the watermelon and tofu but skip marinade or others)

  • If you don’t liquid aminos or soy sauce, use coco aminos

  • If you don’t have lemon, use lime

  • If you don't have olive oil, use avocado oil or sesame oil

  • If you don't have honey, use maple syrup

  • Feel free to be creative with the toppings other options include: cabbage, green onion, radish, mango, jalapeño, etc.


I n g r e d i e n t s

*Makes 2 bowls

1 cup brown rice cooked

2 cups ahi tuna or salmon poke

Marinade

2 tbsp liquid aminos or soy sauce

1/2 lemon juiced

1 tbsp olive oil

1 tbsp honey

Spicy Mayo

2-4 tbsp clean mayo (I like Primal Kitchen)

1-2 tbsp Sriracha

Toppings

cucumber

carrots

edamame

sushi ginger

avocado

sesame seeds



D i r e c t i o ns

Cook brown 1 cup brown rice according to instructions on packaging.


Add all marinade ingredients to a large bowl and whisk together.


Add poke to the marinade, mix until fish has all been coated and let sit for about 15 minutes, can sit outside of fridge.


In a separate bowl mix spicy mayo ingredients. I suggest starting by adding the mayo and then slowly add a little Sriracha at a time depending how spicy you like it. Continue adding Sriracha until your desired spice level.


Add brown rice to bowl and add desired toppings including marinade poke. Top with spicy mayo and sesame seeds.


Use chop sticks to eat if desired :) Enjoy!
