This pizza is EVERYTHING! I've made this pizza for a while now and I can't believe I'm just now posting it!
Sometimes I have to remind myself to keep it simple and go back to basics. I'm often challenging myself to be super creative and come up with new recipes, but sometimes simple is better taking me back to recipes I haven't made in a while.
The flavors in this pizza are to die for and pair so well together! I used store bought cauliflower crust to make this gluten free, but feel free to use whatever crust you desire.
This definitely isn't my healthiest recipe but, dang is it delicious! This will take you less then 5 mins to put together and 15 mins to cook depending on the crust you use, so it's such an easy meal!

If you don't have these exact ingredients, Scrounge with the things you have at home! You may end up creating something even better!
If you don't have cauliflower pizza crust, use whatever crust you want
If you don't have pesto, use red sauce
If you don't have sun dried tomatoes, use regular tomatoes
If you don't have crumbled goat cheese use crumbled feta or parmesan
If you don't have spinach, use arugula
If you don't have pine nuts, do without
If you don't have balsamic vinegar, do without
I n g r e d i e n t s
* 1 pizza serves 2 people
1 round cauliflower pizza crust (pre-cooked/unfrozen)
1 cup or 7-8oz pesto
1/2 cup or 3.5oz crumbled goat cheese
1/2 cup sun-dried tomatoes
1-2 handfuls spinach
1 handful pine nuts
Balsamic vinegar
D i r e c t i o n s
Preheat oven according to instructions on pizza dough.
If you buy dough that needs to be rolled out then this is your first step; if you buy pre cooked pizza dough, skip this step.
Spread a layer of pesto to cover dough.
Sprinkle goat cheese evenly on top of pesto.
Sprinkle sun dried tomatoes and pine nuts on top of goat cheese.
Top with enough spinach to cover pizza.
Splash some balsamic on top of pizza.
Cook in oven according to instructions on pizza dough.
