A Healthier Way to PB&J

Who doesn't love PB&J, am I right?! The flavor pairing of the creamy, ooey gooey peanut butter and the fruity jam is the perfect pairing. Whoever came up with PB&J I am v thankful for.

Believe it or not, PB&J is a Scrounge staple in our house because it's quick, easy, delicious and if you do it right it actually can be healthy-ish. That's why I thought I'd write this post about how to make a healthier PB&J. See my suggestions below, but don't forget to make it your own by Scrounging!

Tips for making a healthier PB&J:

  • Choose a healthy bread a few suggestions are: Food for life Ezekiel Bread, or Food for Life Gluten Free Bread or Canyon Gluten Free Bread

  • Use peanut butter or almond butter (or any nut butter) without added sugar or oils.

  • Make homemade jam! See my recipe below – trust me this will take your PB&J to a whole new level, it tastes so much better than store bought jam! Or if you don't have jam use fresh berries like raspberries, blueberries, blackberries, strawberries, or a mix.

  • Add some fun toppings if desired like, bananas, cinnamon, unsweetened shredded coconut or a drizzle of honey.

If you don't have these exact ingredients, Scrounge with the things you have at home and you may end up creating something even better!

  • If you don't have strawberries use, raspberries, blackberries or blueberries

  • If you don't have honey, use maple syrup

  • If you don't have lemon juice, do without

  • If you don't have sea salt, do without

4 cups strawberries

1/4 cup honey

3 tbsp lemon juice

1/4 tsp sea salt

If using strawberries, hull them first (this video will show you how to hull a strawberry, I like using the straw method) add your berries to a small to medium sized pot. Mash them with a potato masher or the bottom of a cup to release some of their natural juices. Add your honey and heat over medium high.

Bring the mix to a high simmer, stirring every now and then, until the mixture really thickens. This whole process took about 35-45 minutes.

Once It has really thickened, turn off burner and stir in your lemon juice and sea salt. Allow the jam to completely cool and then transfer to an airtight container. It will continue to thicken in fridge!
