Sweet Potato Tacos

Tacos at our house are a Scrounge dinnertime staple. Each time I cook tacos they are slightly different depending on what I have at home. To be honest, in this instance I was planning to make salmon tacos, but the salmon didn't turn out very well so... it was time to Scrounge! I happened to be baking sweet potatoes in the oven as a side to the tacos, so I decided to make veggie tacos. These veggie tacos turned out so delicious, even my husband, a meat lover, enjoyed these! Try being creative with what you have at home to make some healthy tacos, I promise you won't be disappointed.

The Scrounge:

If you don't have these exact ingredients, Scrounge with the things you have at home, You may end up creating something even better!

  • If you don't have arugula, use spinach or romaine or do without

  • If you don't have salsa, slice up some tomatoes or use pico de gallo

  • If you don't have goat cheese, use feta, or any other sprinkle cheese you have at home or take a grater to a cheese block and shred some onto the taco

Ingredients:

  • Tortillas - I like any of the Siete tortillas

  • 1 Sweet potato

  • 1 Avocado

  • Hot sauce (optional) - I love Valentina or Yellowbird

  • Crumbled goat cheese (optional)

  • Arugula

  • Salsa

  • Olive oil

  • Sea Salt

  • Pepper

  • Rosemary (optional)

  • Turmeric

Preparation:

Sweet Potatoes

  1. Preheat oven to 425°

  2. Slice sweet potatoes on an angle similar to the shape of fries

  3. Place sweet potatoes on baking sheet

  4. Cover sweet potatoes with olive oil, sea salt, pepper, rosemary and turmeric

  5. Use hands to coat sweet potatoes

  6. Bake in oven for 25 minutes

  7. Let cool for a few minutes before placing into taco

Tacos

  1. While sweet potatoes are cooking begin prepping the taco ingredients

  2. Heat up the tortilla in microwave for 8-10 seconds or over the stove top

  3. Spread a few slices of avocado on top of yogurt

  4. If using hot sauce splash a little onto the avocado and yogurt and spread together (FYI this may not look the prettiest color :)

  5. Add the sweet potatoes on top (feel free to smash them a little)

  6. Top with arugula, crumbled goat cheese and salsa

  7. Enjoy!

* 2 tacos per person is usually very filling
