I created this tuna sandwich the other day and let me tell you, I out did myself! I can't believe how good this turned out! This is always how my best recip
es turn out, when I'm just Scrounging in the kitchen and allow myself to be creative to come up with a meal. That's exactly how this tuna sandwich came about.
Not only is it delicious, it's also gut friendly! I like to use skipjack tuna, specifically THIS one, because skipjack is naturally lower in mercury and it contains omega-3s and lots of protein. I like this specific one because it's wild and sustainably caught. This sammie is also dairy free, which most tuna isn't, I used a vegan mayo.

i n g r e d i e n t s
**measuramnets are all rough bc I didn't measure, so taste test and add more of whatever you like
1 can Wild Plant Skipjack Tuna
1 tbsp vegan mayo
1 tbsp dijon mustard
1 tbsp sliced peperoncini (or as many or little as you want)
1 tbsp kalamata olives (or as many or little as you want)
1 tbsp fresh parsley
sprinkle cracker black pepper
1 tbsp vegan pesto I used the brand Gotham Greens, Trader Joes has a good one too
Sour dough bread
Toppings (all optional but recommended)
Arugula
Tomato
Cucumber
Micro greens
d i r e c t i o n s
Strain tuna fish
In a medium bowl mix together tuna fish, mayo, mustard, peperoncini, olives, parsley, pepper
Toast sour dough in toaster
Spread pesto on bread, add tuna salad on top add desired toppings
Enjoy!
