Superfood Chocolate Bark

What if I told you chocolate could actually support your gut?



Yep, that’s right - meet my superfood chocolate bark!  


This bark actually benefits your gut health rather than hurting it like most store bought desserts and sweet treats. 


Eating chocolate that is at least 70% cacao content or higher (without tons of added sugar) has so many gut health benefits such as: 


  • Prebiotic power - the polyphenols in cacao act like prebiotics 

  • Help calm Inflammation in the gut - cacao’s antioxidant compounds help to do this

  • Boosts microbial diversity 

  • Mood boosting - cacao helps your gut produce more serotonin (mood boosting hormone

  • Blood Sugar & Craving Control - The fiber and polyphenols in dark chocolate can help stabilize blood sugar and reduce the type of cravings that mess with your gut health.

Ingredients:

* approximate measurements, use as much or little as you want

  • ~1- 2 c. dark chocolate chips - I recommend 70% or higher

  • ~1 -2 handfuls Walnuts

  • ~1 c. organic peanut butter - no sugar or oils added. Sea salt is ok. (optional, you can do without peanut butter if you have an allergy or don't want)

  • 1-2 tbsp coconut Oil - this helps to thin out the chocolate

Toppings:

  • Flaky sea salt

  • Cacao nibs

  • Bee Pollen

  • Dried Strawberries


Directions:

  1. Chop walnuts into pieces or break apart with hands

  2. In a small pot melt chocolate chips, peanut butter and coconut oil on low on stove top

  3. Mix in walnuts to pot with melted chocolate mixture and stir together

  4. Add parchment paper to a baking dish or large glass food storage container

  5. Pour chocolate mixture onto parchment paper and even out with a spatula

  6. Top with all toppings or whichever you choose

  7. Place in freezer for at least 1 hour, but best to let sit overnight

  8. Store in freezer
