Summer Tomato & Bean Salad

This salad is perfect for all of your summer backyard bbqs!

It's so fresh and light and not to mention SO easy to make! If you have a tomato garden this Scrounge is great way to use them up. I actually wanted to use edamame for this but didn't have any so used lima beans, which were so tasty, you know me always be Scroungin'. Let me now if you try this out and what you think!

If you don't have these exact ingredients, Scrounge with the things you have at home! You may end up creating something even better!

  • If you don't have grape tomatoes, use any tomatoes

  • If you don't have lima beans, use edamame or chickpeas

  • If you don't have Red onion, do without

  • If you don't have basil, use parsley or cilantro

  • If you don't have olive oil, use avocado oil

  • If you don't have red wine vinegar, use apple cider vinegar

  • If you don't have honey, use agave

  • If you don't have lemon juice, use lime juice

  • If you don't have minced garlic, use garlic powder


I n g r e d i e n t s

Salad

1 carton grape tomatoes

1 bag frozen lima beans

Red onion

Basil

Dressing

1/2 cup olive oil

2/3 cup red wine vinegar

1 tbsp honey

1/2 lemon juiced

1/4 tsp minced garlic

sea salt and pepper to taste

Directions

Cook lima beans according to bag.


Chop grape tomatoes in halves.


Chop red onion into small pieces, as much or little as desired.

Add all salad ingredients into a medium bowl.


Add all dressing ingredients into a small bowl and whisk together.


Drizzle dressing over salad and mix together.
