This salad is easy on the digestive system and the sauerkraut helps to support gut health.

If you don't have these exact ingredients, Scrounge with the things you have at home and you may end up creating something even better!
If you don’t have arugual, use spinach, romaine, kale, etc.
If you don’t have tomato, use just cucumber
If you don’t have cucumber, use just tomatoes
If you don’t have lemon juice, do without
If you don't have Himalayan salt, use sea salt
If you don't have olive oil, do use avocado oil or do without.

Cucumber, skin peeled

Take skin off of cucumber as that helps with digestion when healing the gut.
Chop up the tomato and cucumber in to smaller chunks
Add all ingredients to a large bowl or plat then top off with olive oil, salt, pepper and lemon juice. Or can use My Simple Salad Dressing instead.
