French Toast

Growing up, my mom always made French toast. Some foods just hold that cozy, comforting magic and French toast is one of them.

I might even love it more than waffles or pancakes. It’s simple, unfussy, and always hits the spot. While most French toast recipes are pretty similar, this one puts my own little Scrounge spin on things, made with wholesome, gut-friendly ingredients that love you back.


And when it comes to toppings, I don’t hold back. Fresh berries, pure maple syrup, grass fed, butter or ghee, sprinkle of cinnamon, a drizzle of nut butter… the more, the better. I hope you enjoy this cozy classic as much as I do!

T h e S c r o u n g e

If you don't have these exact ingredients, Scrounge with the things you have at home! You may end up creating something even better!

  • If you don't have almond milk, use any plant based milk

  • If you don't have almond extract, use vanilla extract (1/2 teaspoon total)

  • If you don't have nutmeg, do without

  • If you don't ave cinnamon, use pumpkin pie spice and skip the nutmeg as this usually has nutmeg and cinnamon in it

  • If you don't have lemon zest, use orange or lime zest or do without

  • If you don't have sour dough read, use whatever bread you have


I n g r e d i e n t s

*serves 4 makes ~8-12 pieces depending on bread size

4 eggs

2/3 cup almond milk

2 tsp cinnamon

1/4 tsp vanilla extract

1/4 tsp almond extract

a few dashes of nutmeg (optional)

zest of 1/2 a lemon (optional)

Sour dough bread - ideally from a bakery or the bakery section in the grocery store

Optional Toppings

grass-fed butter or ghee

pure maple syrup

nut butter: almond, peanut, cashew or mixed

cinnamon

more lemon zest

fresh berries

unsweetened shredded coconut

D i r e c t i o n s

  1. In a large mixing bowl, whisk all ingredients excluding the bread.

  2. Using a large griddle or a skillet, over medium high heat, melt butte or ghee to cover cooking area.

  3. Soak each side of bread slices in egg mixture, one at a time.

  4. Place soaked bread on griddle or skillet and allow to cook until browned on one side, then flip and brown the other side, about 2-3 minutes each side.

  5. Remove from heat once cooked and place on a plate.

  6. Serve with any or all of the optional toppings listed above and enjoy!
