Egg Muffins

Ok so these Egg Muffins are truly the PERFECT SCROUNGE!

As long as you have eggs in your fridge, you can add any veggies and/or meat you want to make this Scrounge your own and use up any veggies/meat you have at home. Listed below is what I used because it's what I had on hand, but you can honestly use whatever you have in your kitchen, the beauty of a Scrounge.


These muffins are also ideal for a quick healthy breakfast or on-the-go option, just warm them up in the microwave for about 1:30 and they're ready to eat.

If you don't have these exact ingredients, Scrounge with the things you have at home and you may end up creating something even better!

  • If you don't have 12 eggs, use as many as you have, 1 egg makes 1 muffin

  • If you don’t have bell peppers, use any veggie you have on hand

  • If you don’t have zucchini, use any veggie you have on hand p

  • If you don’t have grape tomatoes, use any veggie you have on hand

  • If you don't have chorizo, use bacon, sausage, chicken, turkey, steak, etc. any meat you have on hand

  • If you don't have cheese, do without

I n g r e d i e n t s

*makes 12 egg muffins

12 eggs (organic preferred)

1 bell pepper chopped, any color or half of 2 bell peppers different colors

1/2 a zucchini chopped

1 handful of grape tomatoes, chopped

1 sleeve of chorizo

1 cup cheese of choice or as much or little as desired

sea salt & pepper to taste


D i r e c t i o n s

Preheat oven to 350°F and spray muffin pan with cooking spray or use muffin liners, I used avocado oil spray.


Squeeze chorizo out of casing into a skillet and cook for 6-8 minutes stirring often.


Crack all 12 eggs into a large bowl and whisk until smooth.


Add chopped peppers, tomatoes, zucchini, sea salt and pepper to eggs, mix together.


Once chorizo is done heating, add to egg mixture and then add cheese. Mix all together.


Add about 1/3 cup of egg mixture to each muffin cup.


Bake for 20-25 minutes, or until toothpick comes out clean.


Save in fridge for 7-10 days. Reheat before eating in microwave for ~1:30.
