Creamy Quinoa Vanilla Almond Porridge (vegan)

Get ready to spice up your breakfast game with this creamy porridge!

I love me some oatmeal for breakfast but I wanted to try something different so I thought how could I scrounge with quinoa for breakfast? Lo and behold this creamy quinoa vanilla almond porridge!

Not only does this porridge taste oh so good, but you can feel good about eating it too! Quinoa provides protein and fiber keeping you full and satisfied until lunch, and I used natural sweeteners to add flavor so no need to worry about too much sugar in the morning causing you to crash later.

If you don't have these exact ingredients, Scrounge with the things you have at home and you may end up creating something even better!

  • If you don't have quinoa, try steel cut oats & follow cooking instructions on package

  • If you don’t have almond milk, use any plant based milk

  • If you don’t have maple syrup, use honey or agave

  • If you don’t have almond extract, use all vanilla extract

  • If you don't have vanilla extract, use all almond extract

  • If you don't have cinnamon, do without


I n g r e d i e n t s

1 cup quinoa

1.5 cups almond milk

1/2 cup water

2 tbsp maple syrup

1/4 tsp vanilla extract

1/4 tsp almond extract

1/4 tsp sea salt

a few dashes of cinnamon


D i r e c t i o n s

Add all ingredients into a pot.


Bring to a rolling boil.


Once boiling, cover pot with lid and let simmer for 15 minutes or until liquid is evaporated, however it should still be a bit creamy so it's ok if not completely evaporated.


Serve warm. Add toppings like berries, nuts, nut butter, shredded unsweetened coconut, etc. I like it best served with almond milk poured over the top, like you would eat cereal!


Keep in the fridge for 7-10 days.
