Chia Seed Pudding

Make this pudding the night before for the perfect, grab and go, healthy and delicious breakfast!

Be creative with the toppings, the more fresh fruit the better in my opinion. Chia seeds are such a great super food, they have tons of antioxidants, loaded with fiber, omega-3 fatty acids, and are a great source of plant based protein. Enjoy!

If you don't have these exact ingredients, Scrounge with the things you have at home! You may end up creating something even better!

  • If you don't have chia seeds, use rolled oats

  • If you don't have almond milk, use any plant based milk (i.e. cashew, oat, soy, etc.)

  • If you don't have strawberries or bananas, use any fruit (i.e. raspberries, blueberries, blackberries, peaches, grapes, pineapple, mango, etc.)

  • If you don't have honey, use agave, maple syrup or do without

  • If you don't have cocoa nibs, use chocolate chips, cinnamon, nuts or do without


Ingredients

4 tbsp chia seeds

2/3 cup non dairy mylk - I like homemade cashew mylk but any will do

Toppings Ideas:

strawberries

bananas

honey

cocoa nibs

cinnamon

pure maple syrup

nut butter


Directions

In a jar or bowl add chia seeds and mylk. Add lid and shake or stir in bowl.


Let sit for at least 2 hours or overnight.


When ready to eat add toppings of choice.
