Guac Guac Guac!

Truth be told, Guacamole is one of the first things I learned how to make. It also happens to be one of my favorite foods – if you couldn't guess from all of the avocados I use in my recipes :)

My OG guac recipe is super simple because I think avocados taste so good on their own. However, the other night I was having some friends over for the Bachelor Premiere (guilty!) and was whipping up some snacks for us. I knew I wanted to make guac because I had avocados to use up, I decided to spice things up a bit. My OG guac consists of avocados, tomatoes, garlic powder and sea salt, that's it! It's so simple yet that's what makes it so delicious, the pureness of the avocados and tomatoes. I love that you don't need a million ingredients to make it and it still tastes delicious, trust me it's always a crowd pleaser!

This time around, I used all of the ingredients from my OG guac but added in pumpkin seeds, lime juice and paprika (my new favorite spice!). I meant to add crumbled goat cheese as well but forgot (oops!), I recommend trying that out too if you desire!

Ingredients:

*serves 4-5 people

  • 3 large avocados

  • 2 handfuls of grape tomatoes - I had yellow and red ones on hand so I used both, whatever kind of tomatoes you have use them!

  • Garlic powder

  • Sea salt

  • Paprika

  • 3-4 tbsp pumpkin seeds

  • 1 lime

  • Goat cheese ( optional)

Preparation:

  1. Cut the avocados out of the skin and scoop them in a large bowl

  2. Slice the tomatoes into small pieces (if using grape tomatoes about a quarter size of those)

  3. Add the tomatoes to the avocado

  4. Add in the garlic, sea salt and paprika to avocados and tomatoes - I always guesstimate these based on how it tastes. Add a little bit of each and taste test to see how you like it, keep adding until your desired taste

  5. Add pumpkin seeds

  6. Squeeze the juice of one lime and add to guac bowl

  7. Mix everything together

  8. Garnish with a few sprinkles of paprika and some pumpkin seeds

  9. Serve with tortilla chips or veggies - I love eating Guac with veggies too like carrots, cucumbers, peppers, celery etc.

The Scrounge:

If you don't have these exact ingredients, Scrounge with the things you have at home! For example, if you don't have grape tomatoes – use salsa or pico de gallo. If you don't have pumpkin seeds – use cashews or any nut. If you don't have goat cheese – use feta or do without. You may end up creating something even better!
