Game Day Pesto Pasta Salad

It's GAME DAY!! The start of football season is a big deal in our household and today in Chicago we have the perfect football weather to kick off the season! We always love getting our friends together for Sunday games and of course, it usually revolves around food. I thought I'd share a super easy and delicious pasta salad recipe that you can bring to any game day festivities you have this season. Bonus, you can feel good about eating it too! It's not the healthiest recipe on The Scrounge, but it's better than some other options for game day food :). Warning: this pasta salad will go fast so make sure you save some for yourself too! INGREDIENTS:

  • 1 box Chickpea Noodles (Banza)

  • Scrounge Options: you can use whatever noodles you have at home but I'd suggest they be rotini or penne in shape, these chickpea noodles taste great and are a healthier option

  • 2 tbsp Mayo or Vegenaise

  • Scrounge Options: I try to use a healthier mayo option like this one or vegenaise

  • 1 c. Basil Pesto

  • 2 C. Grape Tomatoes

  • Scrounge Options: heirloom tomatoes, roma tomatoes, any kind of tomato will work or try using bell peppers

  • 1/4 c. sunflower seeds

  • Scrounge Options: pumpkin seeds, cashews or almonds

  • 1/2 Lemon

  • LOTS of Pepper

  • Sea Salt or Himalayan Salt

PREPARATION:

  1. Cook the noodles according to instructions on box

  2. Rinse with cool water to cool off the noodles

  3. Slice grape tomatoes into halves or quarters

  4. Combine all ingredients in large mixing bowl and mix together (use the half lemon to squeeze the juice into the bowl along with the rest of the ingredients)

  5. Enjoy!
