Homemade Scrounge Salsa

It’s Labor Day weekend and I'm visiting family at the lake, so I thought I’d share this homemade Scrounge Salsa recipe that's great for group gatherings!

The neighbor at my parents lake house have a fabulous vegetable garden and are generous enough to bring over lots of fresh veggies. I’ve never made my own salsa but I’ve always wanted to try it out. I figured now was the time to give it a whirl given we had so many fresh veggies in the house! This is why I love cooking, the excitement of creating something new, making it my own and of course, taste testing it at the end, all give me such joy! Not to mention, I find pleasure in not wasting food and in knowing that I can feel good about the ingredients in my recipes. I hope you love this fresh salsa as much as my family and I. Impress your friends and family by bringing this salsa to any of your weekend festivities!

Ingredients:

  • 4-5 medium size tomatoes

  • ½ white onion

  • 1-2 small green peppers (if you don’t have these you can try it without)

  • 1/8 c. cilantro

  • 1 ½ limes (use the juice of the limes only)

  • 2 tbsp minced garlic (you could try using garlic powder if you don’t have fresh or minced garlic)

  • ½ jalapeno (optional depending on how spicy you want it)

  • Sea Salt and pepper to taste

  • 2 dashes of cumin (if you don’t have this do without but I would suggest adding more sea salt and pepper)

  • 2 dashes fajita seasoning (optional you can do without)

  • 2 tbsp hot sauce ( I used Sriracha because that’s what we had but you could use any hot sauce or do without)

  • 2 tbsp olive oil

Preparation:

  1. Heat the tomatoes, green peppers and onion in a skillet with olive oil for about 5-10 minutes until tender

  2. Once the veggies are done place them in a blender along with all other ingredients

  3. Pulse the ingredients a few times until well combined or until your desired consistency. I made mine a little more pureed but if you like yours a little chunkier you can blend it for less time.

  4. Jalapeno and/or cilantro to garnish if desired

  5. Some healthier chip options to serve this with that still taste delicious are, Terra Vegetable Chips (classic sea salt) or Siete chips (I like lime or sea salt flavored). If you have any extra salsa left over I suggest saving it and using on top of salads, for tacos on top of meat etc. Salsa is so versatile and healthy that's why I love always having some on hand!
