Salad Tacos

These salad tacos have become a bit of a staple in our household and they are the easiest most delicious thing ever!

Since you all know I hate wasting food, these look a bit different each time depending on what we have in our fridge. The two main ingredients are the taco shells and the greens, the rest you can Scrounge as you like!


T h e S c r o u n g e

If you don't have these exact ingredients, Scrounge with the things you have at home! You may end up creating something even better!

  • If you don't have taco shells, use pita or a wrap

  • If you don't have avocado, use plain Greek yogurt or dairy free plain yogurt

  • If you don't have hot sauce, sprinkle some smoked paprika or do without

  • If you don't have tomatoes, bell peppers or cumbers, use whatever veggies or beans you have (i.e. sweet potatoes, broccoli, carrots, zucchini, corn, black beans, edamame)

  • If you don't have pepitas, use whatever nuts you have at home (i.e. sunflower seeds, cashews, almonds, walnuts, pecans, pistachios, etc.)

  • If you don't have vegan ranch dressing, do without or us whatever dressing you have

  • If you don't have salsa, use pico de gallo or do without

* I eat 2 tacos as a meal. I did not list measurements because it's all based on your liking.

Taco shells

Avocado

Hot sauce

Greens - spinach, kale, romaine, arugula, whatever you have

Tomatoes

Bell peppers (optional)

Cucumbers - skin peeled

Pepitas/pumpkin seeds (optional)

Vegan ranch dressing

Salsa


D i r e c t i o n s

I like to start by heating my taco shell on the stove top, literally right on top of the flame, on the lowest setting just let the shell sit for about 30secs - 1min on each side. I love Siete almond flour tortillas, but any tortilla or wrap will do!


Take your taco shell and smash avocado on the bottom, as much or little as you like.


Then add a few drops of hot sauce on top of avocado, I like Tabasco's Chipotle flavor or Valentia.


Add your greens on top of avocado and begin layering on your veggies and nuts: tomatoes, peppers, cucumber and pepitas.


Top with a drizzle of vegan ranch dressing or I like to use this simple salad dressing, and a spoonful of salsa. I also like to add cracked pepper.
