This Nacho Average Salad was another Scrounge creation using the food I already had in my kitchen. It was a Monday night and I didn't have time to grocery shop, but I still had a few things left in my kitchen, so it was time to Scrounge. Some of my best recipes are created this way, it forces me to be even more creative and leads me to pair things together that I normally wouldn't think to do so. We love chorizo in our house so I thought adding some Mexican flare to this salad would spice things up, needless to say I ate every last bit of this baby! My husband agreed this was super tasty and very flavorful. I'll admit, there are times when I've had Scrounges go wrong, but this was definitely not one of those!
Ingredients:
Serves 2
Arugula or lettuce of your choice
1 c. Sweet potato chip pieces - I love Jackson's Honest chips,
1-2 Roma tomatoes
1/2 c. Salsa - we love Mateo's from Costco, if you haven't tried it you must!
2 handfuls Chickpeas or garbanzo beans
1 Avocado
4 tbsp Crumbled goat cheese or feta
1/2-1 c. Chorizo - I always buy mexican chorizo that comes in the casing
1 Lime
Dressing:
Salsa
Lime juice
Sea salt & cracked pepper
Preparation:
Squeeze chorizo out of the casing into an un-oiled skillet and heat for about 4-5 mins.
Split all ingredients evenly between 2 large bowls
For the dressing, use the salsa, lime juice, sea salt and cracked pepper as
The Scrounge:
If you don't have these exact ingredients, Scrounge with the things you have at home! For example, if you don't 'have these exact chips – use whatever chips you have at home or even nuts for added crunch. If you don't have arugula – use spinach, kale, romaine or whatever lettuce you have at home. If you don't have chickpeas – use black beans or even corn. If you don't have or don't like chorizo – use another protein chicken, steak, ground meat, etc. You may create something even better!
