Healthier Lemon Almond Coconut Pancakes (gluten-free)

I'm telling you these pancakes are SO simple, SO delicious and bonus, they're healthy!

I figured these would be the prefect Scrounge during this quarantine life we're living, because all you need is 2 ingredients that I guarantee you already have a home. All you need is 1 ripe banana and 2 eggs, that's it!


Now of course I Scrounged with these pancakes and added some fun extras to make Lemon Almond Coconut pancakes, but if you don't have all of the ingredients you can use just the banana and eggs. Have fun with these pancakes and get to scrounging with whatever you have at home to spice them up!

If you don't have these exact ingredients, Scrounge with the things you have at home and you may end up creating something even better!

  • If you don't have baking powder, do without, it just makes the pancakes a bit fluffier but it's not needed

  • If you don’t have almond extract, use vanilla extract or do without

  • If you don’t have lemon zest, use orange zest, lime zest or do without

  • If you don’t have shredded coconut, use nuts, fruit, chocolate chips (add once pancakes are on griddle) or do without

  • If you don't have sea salt, do without


I n g r e d i e n t s

*makes ~7-8 pancakes

1 ripe banana

2 eggs beaten

Optional Ingredients:

1/8 baking powder

1/4 tsp almond extract

1 lemon (zest)

1/4 cup unsweetened shredded coconut

2 pinches sea salt

Butter or Oil for griddle/skillet

D i r e c t i o n s

In a medium bowl using a fork, mash one ripe banana. Then add all optional ingredients, if using, and mix together.


In a separate small bowl crack eggs and beat with a fork or whisk.


Add eggs to banana mixture and mix together.


Butter or oil your griddle/skillet.


Pour a small amount of batter for each pancake, approximately 1/4 cup. Flip once the sides start to firm up, approx. 1-2 mins per side. They will be thinner in texture like a crepe.


NOTE: If you want to add any heavier ingredients to your pancakes like chocolate chips, berries, or nuts do so while the pancakes are on the griddle, do not add to batter prior to putting on the griddle.


Enjoy pancakes with fruit, pure maple syrup, butter, nut butter, cinnamon, coconut etc. Have fun scrounging with your toppings!
