Scrounge Style Cacio e Pepe

Some of you may be familiar with this classic pasta dish, Cacio e pepe, it's truly the best and surprisingly SO easy to make at home, so I created my Scrounge Style Cacio e Pepe! 

I don't eat pasta too often, but this dish is so tasty it's hard not to love. I like that the ingredients are simple, clean and not super heavy. I've had this dish at many Chicago restaurants so I decided to find out how it's made, I was pumped to find out how simple it is. Of course I resorted to my Scrounging ways and looked at a few different recipes so that I could come up with my own version based on what I had on hand in my kitchen....and now, we have Scrounge Style Cacio e Pepe! I even added a little crunch using my favorite healthy chips from Jackson's Honest, this Scrounge spin on this classic recipe will be a treat to your taste buds :)  Lately this seems to be my go to Sunday night meal, we tend to not have much food left in our kitchen on Sundays, but still want a simple home cooked meal, Cacio e Pepe to the rescue! I Hope you enjoy this as much as I do! 

 

Ingredients:

  • Gluten free pasta (1/2 box for 2 people) - you can use any type of pasta, I used bowtie just because that's what I had at home. I'm also gluten free so I used gf pasta, but you can definitely use regular. Jovial pasta is my favorite gluten free pasta brand. 

  • Water 

  • 1 tsp pepper 

  • 1 c. Parmesan 

  • 1/2 Stick Butter - my favorite butter is Kerrygold 

  • 1 egg (you'll only use the yolk of the egg) 

  • 1 tbsp olive oil (optional) 

  • Pinch of salt 

  • Jackson's Honest Sweet Potato Chips and Purple Heirloom Potato Chips for a little crunch! (optional)  – these are my all time favorite chips! I love using them for more than just snacking, they have so much flavor and are super clean, so they're great for adding a little crunch and flavor to recipes. 

 

Preparation: 

  1. Cook pasta according to box – I made half a box for 2 people

  2. Add a pinch of salt to water, but not too much since you’ll be using the water for the sauce

  3. Save 1/2 cup of pasta water

  4. After pasta is done, keep pasta in strainer and in the empty pot that you made the pasta, add 1/3 cup of pasta water,  butter and  pepper, stir until melted

  5. Return the pasta to the pot and toss to coat

  6. Add parmesan cheese and egg yolk,  toss to coat.

  7. If the pasta is sticky add more pasta water or olive oil, if too wet add more cheese. Taste and add more pepper and cheese as desired.

  8. After serving pasta into bowls, crush up a few Jackson's Honest sweet potato and purple heirloom chips and sprinkle on top of each bowl of pasta for some crunch and added flavor
