It's GAME DAY! The start of football season is a big deal in our household and today in Chicago we have the perfect football weather to kick off the season! We always love getting our friends together for Sunday games and of course, it usually revolves around food. I thought I'd share a super easy and delicious pasta salad recipe that you can bring to any game day festivities you have this season. Bonus, you can feel good about eating it too! It's not the healthiest recipe on The Scrounge, but it's better than some other options for game day food :). Warning: this pasta salad will go fast so make sure you save some for yourself too! If you don't have these exact ingredients, Scrounge with the things you have at home and you may end up creating something even better!
If you don't have chickpea noodles, use whatever noodles you have at home. Chickpea noodles are a option if you have them
If you don't have vegenaise, use avocado mayo, mayonnaise, or greek yogurt
If you don't have grape tomatoes, use heirloom tomatoes, roma tomatoes, or any kind of tomato, or use bell peppers
If you don't have sunflower seeds, use pumpkin seeds, cashews or almonds
I n g r e d i e n t s
1 box chickpea noodles (Banza)
2 tbsp vegenaise
1 cup basil pesto
2 cup grape tomatoes
1/4 cup sunflower seeds
1/2 lemon, juiced
1-2 tsps pepper (add until desired taste)
1/4-1/2 tsp Sea Salt or Himalayan Salt
D i r e c t i o n s
Cook the noodles according to instructions on box.
Rinse with cool water to cool off the noodles.
Slice grape tomatoes into halves or quarters.
Combine all ingredients in large mixing bowl and mix together.
